"Carb-Less in Seattle" Big Hit for Local Author.
Seattle, WA July 10, 2004 -- Seattle area resident and author Carylton Cooper is delighted at the reviews she has been receiving for her cookbook "Carb-Less in Seattle". A long term struggle with metabolism and thyroid difficulties made her inherently prone to gaining weight and she found herself no longer able to control her weight by copious amounts of exercise after major hip surgery.
Tired of being cold and hungry on "low calorie and low fat diets" she turned to the low carbohydrate lifestyle in an effort to get enough to eat! Research into available recipes left her disappointed; much praised recipes simply didn't make the grade! She began experimenting with flour and sugar substitutes and discovered that she was able to produce stunningly good tasting food.
Drawing on her experiences of many decades of recipe gathering and entertaining, she has produced a culinary bible for the long-term low carb eater. The book contains many basics such as sauces, salad dressings, pastry, biscuits, breads, and a creation called DOODLES which she uses as a substitute for pasta sheets and noodles. When consulted as to "Best" low-carb pasta substitutes, store owners recommend Doodles over products on the shelves!
Her goal was to satisfy the psychological deprivation factor common in the low carb lifestyle. "Nothing tastes quite like a french fry but if you can satisfy your palate with something very similar you will stay on the program more consistently. I set out to add a lot of variety to the typical low-carb fare which I call the Grills and Greens syndrome." Many of her customers write to say that they have discovered new cuisines and skills in the kitchen while continuing to lose weight.
The book also addresses the subject of economy of effort in the kitchen and helps to reduce the expense of low-carb dieting by enabling the user to make many items themselves like delicious protein bars and sauces.
